JACKSON, MI -- Vincent and Dolly Weatherspoon were looking for something they could do together.
So The Tasty Spoon food truck was born. The couple, who are the parents of 13 children, started the business in May and serve barbecue and soul food. The children help with the business when they can.
Rib tips, macaroni and cheese and peach cobbler are the most popular things on the menu, Dolly said.
“We do five hours of cooking on the ribs and rib tips,” Vincent said. “We have two smokers, one for chicken and one for pork.”
The couple has found the new business challenging.
“We can’t keep up really,” Dolly said. “We are learning and it is a lot of fun but a lot of work.”
Vincent, who recently retired from truck driving, has been pleased with the community response.
“Meeting more people is the beauty of it,” he said. “I like seeing the smile. That is so warming. It makes you feel so good.”
The food truck travels to special events and is available for catering. When not busy at events, the truck can often be found serving ribs, chicken and all of the sides at the corner of Martin Luther King Jr. Drive and Ganson Street in Jackson.
