Lemon is a known source of Vitamin C, and as the coronavirus pandemic continues to plague nations, it's a good time to incorporate the fruit in our diets.
Aside from adding it to your water and meals, you can also use lemon to give your desserts a dash of sour.
In an episode of Pinoy MD, host Connie Sison shared her recipe for easy no-bake lemon cheesecake bites.
Prepare the following ingredients:
- 1/2 cup coconut flour
- 1/2 cup oats
- 8 oz plain cream cheese
- 2 tbsp maple syrup
- 1/2 tbsp vanilla extract
- 1/2 tsp almond extract
- lemon zest
First, place the coconut flour and oats in a food processor and blend them. Add the cream cheese, maple syrup, vanilla extract, almond extract and lemon zest in the food processor. When everything is thoroughly mixed, pour the mixture in a bowl.
Put on some gloves and mold chunks of it into a ball. Roll them into shredded coconut and them in leftover lemon zest.
Once done, place in the refrigerator for two hours, and voila! Your easy, no-bake dessert is ready to eat. —JCB, GMA News
