Perhaps opening a restaurant based on salads, whole grains and protein-packed bowls flies in the face of conventional wisdom regarding food sales in economic downturns.
While some restaurant menus are shifting to burgers dripping with cheese, fried chicken and other not-so-healthy comfort food, Barry Bialik's new Tasty Greens, which opens in Biltmore Park Town Square Sept. 2, will focus on healthier fare.
The menu at Tasty Greens is full of customizable grains bowls and salads. Kale, whole grains and lean protein abound.
But though this is how Thirsty Monk founder and CEO Bialik and his staff eat, this is no whim.
"During COVID time, I read every industry article about who's doing well," Bialik said.
Chains like Sweetgreen and Chopt Creative Salad Co. are booming. They also offer a lot of personal appeal for Bialik, himself a healthy eater.
Bialik thinks the concept will do well in Biltmore Park, where neighbors include the YMCA and REI, an outdoors outfitter.
He also thinks that people who have been more sedentary during COVID shutdowns than they might have otherwise been will appreciate a healthier option.
Not that these are bowls of penance; a roasted corn and Cotija cheese bowl with chipotle ranch is comfort food as far as Bialik is concerned.
"We think the warm bowls will be a huge part of this concept," Bialik said.
Tasty Greens is in the front of Monk's Flask and adjoining the Biltmore Park location of Thirsty Monk, at 2 Town Square Blvd #160. The restaurant, open for lunch and dinner, has outdoor seating and offers delivery through Takeout Central.
