Today, on Earth Day, treat your tastebuds to interesting dishes from culinarian and food stylist Vindhya Karwa - it might set you on a more planet-friendly journey for life.


Earth Day is an annual event to express our support for environmental protection. On this occasion, culinarian and food stylist Vindhya Karwa, who runs the  Instagram handle @Vinsplate offers us some unique vegan recipes. “Building a daily meal plan around plants is not only great for our mental and physical health, it also helps us make the planet we inhabit a better place,” Vindhya says. “Vibrant, diverse and nourishing vegan food could be the best possible way for us to live long, healthy lives in a clean and green environment. On Earth Day, let us all do our bit to preserve nature’s bounty, be it our land, grains, water, even lives, by following a healthy, vegan diet so that we can together build a sustainable future.” 

Potato Leek Soup

Ingredients
 

1 tsp oil
1 onion, chopped 

2 cloves garlic 

2 large leeks, roots removed and chopped 

2 potatoes, peeled and chopped 

2 tbsp chopped chives 

Salt and pepper, to taste 

4 to 5 cups veg broth 

Spring onion greens or fresh thyme sprigs, to garnish

Fried thin noodles, to garnish

 

Method

  1. Heat the oil in a pan. Add the onion, garlic and leek, and cook until they are soft. 
  2. Add the potatoes, chives, salt and pepper. Stir until all the ingredients are soft.
  3.  Add the broth, stir the ingredients together, bring to a boil, and cook until potatoes are completely soft.
  4.  Blend the soup in a food processor to a smooth purée, and pour the mixture back into the pan. Add a little more broth if the soup is a little too thick for you. 
  5. Remove from the pan, and allow the soup to cool. 
  6. Serve it chilled, garnished with fried noodles and spring onion greens or fresh thyme sprigs.

 

Brussels Sprouts with Noodles

Ingredients

300 g Brussels sprouts 

3 tbsp olive oil 

Salt, to taste 

Black pepper, to taste 

1 tbsp chopped chives
Cooked noodles, to serve 

For the sauce:

1½ tbsp wheat flour 

2 cups water 

3 tbsp soy sauce 

2 tbsp sriracha sauce 

2 tbsp honey 

 

Method 

  1.  Preheat the oven, and line a baking sheet with parchment paper. 
  2. Wash the Brussels sprouts, and cut  a cross into each lengthwise so that the seasoning and sauce go in completely and the flavours are absorbed 
  3. Spread the sprouts on the baking sheet, drizzle with half the oil, salt and pepper, making sure each one gets coated. Turn them all upside down.  
  4. Bake for 10 minutes or more until they are golden brown.
  5. To prepare the sauce, place  the wheat flour, water, soy sauce, sriracha sauce, and honey in a bowl, and mix well.
  6. Heat the remaining oil in a pan, add the sauce along with the cooked Brussels sprouts and chives, and stir until each sprout is covered in sauce. Cook until the sauce thickens to the desired consistency. 
  7. Serve with cooked noodles.

Sticky Fried Rice With Green Beans And Shiitake Mushrooms

Ingredients 

2 tbsp oil 

10 shiitake mushrooms 

1 onion, chopped

5 garlic cloves, crushed 

20 blanched green beans 

2 to 3 tbsp soy sauce 

1½ tbsp maple syrup 

2 tsp chilli flakes 

Salt, to taste

Black pepper, to taste 

1 tbsp toasted sesame seeds 

 

For the sticky fried rice:

1 tbsp oil 

3 cloves garlic, crushed

1 cup cooked sticky rice 

1 to 2 tbsp soy sauce 

Salt, to taste

Black pepper, to taste 

1 cup chopped spring onion 

 

Method 

  1. Heat the oil in a pan. Sauté the shiitake mushroom till they caramelised and brown in colour. 
  2. Add the onion, garlic, green beans, soy sauce, maple syrup, chilli flakes, salt and pepper. Mix well until the veggies are properly coated with the sauce mixture. 
  3. Garnish with the toasted sesame seeds.
  4. To prepare the sticky fried rice, heat the oil in a pan. Add the garlic and sauté for 30 seconds. Add the cooked sticky rice, and stir. Add the soy sauce, salt, pepper and spring onion, and cook until  well  combined.
  5. Serve the hot.
