Most cooks would probably agree, to be asked for your recipe on a particular dish is a sincere form of being complimented. However, to be asked to bring your dish to a gathering because it’s everyone’s favorite is the highest accolade of all; especially if someone says the men RAVE over it. (I don’t know why that seems to validate one recipe over another but in Osage county, it is definitely another stamp of approval.)
For Dr. Jan Johnston Tharp, one of her most requested recipes to prepare to bring to a covered dish gathering is her hominy casserole. It sounds divine and I know I’d get in line to have a helping of her mouthwatering side dish. Dr. Jan assures all this recipe is sooooooo easy and she never once said men rave about it!
HOMINY CASSEROLE
2 – 16 ounce cans white hominy (drained)
2 – 16 ounce cans yellow hominy (drained)
1 lb. cheddar/jack cheese (grated)
2 – 4 ounce cans green chiles (chopped). Use mild or medium to your taste.
1 cup cheddar cheese grated on top
Mix all ingredients except the cup of cheese for the top. Place in a greased casserole dish. I use a 3 ½ quart dish. Bake at 350 degrees for 30-45 minutes. This recipe can easily be halved to serve a small family. Dr. Jan said, “I always make this size because Brian loves the leftovers. And it reheats very well.” Now how’s that for a little LOCAL FLAVOR!!!???
