ALISO VIEJO, CA — When you pass through the doors of Eureka! Aliso Viejo, the energy in the restaurant is buzzing with excitement — and for good reason. The restaurant just opened its doors this March, and even on a Wednesday, the bar is packed and every table is filled with hungry (and thirsty) patrons looking to get a taste of the new dining experience.

This Patch Editor was one of a lucky handful of people able to experience Eureka! Aliso Viejo firsthand during a Wednesday night media dinner held to celebrate the restaurant's opening.

When walking into the 4,900-square-foot eatery, it's almost hard to believe that the building Eureka! Aliso Viejo operates out of used to be a Panera. The eclectic makeup of the restaurant boasts both contemporary farmhouse meets coastal design, and the large windows and sky-high ceilings provide a very light and airy atmosphere.

Eureka! Aliso Viejo's menu offerings exemplify the restaurant's from-scratch kitchen and its creative craft beverage program.

The drink menu features an elevated collection of local craft beers, small-batch whiskeys, and classic cocktails with modern twists at an approachable price point — and with the calories per order listed on the side.

The drink menu is sure to delight a 21-and-older crowd and this Patch Editor would suggest one of the restaurant's cocktails to go with your meal. "Morning, Peaches" was a personal favorite with its bourbon, peach, lemon, coffee liqueur and vanilla.

For those in want of a drier drink, this Patch Editor would recommend the "Tipsy Pig Old Fashioned," with rye, bitters, barrel-aged maple syrup and served in a Whistle Pig.

While whiskey may be Eureka's specialty, the restaurant's Moscow mule packed quite a punch.

To start your meal, this Patch Editor would recommend Eureka's delightfully crispy Mac N' Cheese Balls with beer cheese sauce, Fresno chiles and parmesan as well as an order of Crispy Glazed Brussels Sprouts with orange chile glaze, chimichurri and almonds — a crunchy and refreshing take on the vegetable.

For a main meal, Eureka! is known for its Santa Carota carrot-fed Angus beef — and for good reason. This Patch Editor tried the Jalapeño Egg Burger and found it juicy and succulent — and the egg was perfectly fried, to boot.

If burgers aren't your thing, the perfectly-fried Baja Fish Tacos come highly recommended.

For dessert, this Patch Editor could not decide between the Bourbon Barrel Cake — with its candied pecans, bourbon caramel and vanilla bean ice cream — and the Hooked on Chocolate, featuring bourbon whipped cream, Buffalo Trace chocolate sauce and lava salt. For dessert, we'll call a tie.

You can find Eureka! Aliso Viejo at 26541 Aliso Creek Road Suite F., open 11 a.m. to 11:30 p.m. Sunday through Thursday, and Fridays and Saturdays from 11 a.m. to 12:30 a.m.

Deals include Monday through Friday "hoppy" hours from 3 p.m. to 6 p.m., half-off wine of Tuesdays, Steal the Glass on Wednesdays and $7 Bloody Marys and Mimosas on the weekends.
