Dinner in a Pumpkin

From Celebrate Every Season with Six Sisters' Stuff
Serves: 6 | Prep time: 25 minutes | Cook time: 1 hour, 15 minutes | Total time: 1 hour, 40 minutes

INGREDIENTS

  • 1 medium pumpkin (see note)
  • 1 tablespoon olive oil
  • 2 cups chopped assorted vegetables, such as celery, carrots, onions, green pepper, sweet potatoes, mushrooms, etc.
  • 1 pound lean ground turkey
  • 1 tablespoon soy sauce
  • 1 (14.5-ounce) can condensed cream of chicken soup
  • 2 cups prepared brown rice

DIRECTIONS

  1. Cut off the top of the pumpkin and thoroughly clean out pulp and seeds.
  2. Preheat oven to 350 degrees F.
  3. Heat oil in a large skillet over medium heat, add assorted veggies, and sauté until tender. Add meat, breaking up into small pieces and cooking until browned.
  4. Stir in soy sauce, soup, and cooked brown rice. Mix well.
  5. Spoon mixture into cleaned pumpkin shell. Replace pumpkin top and place entire pumpkin on a baking sheet.
  6. Bake 1 hour, or until inside meat of the pumpkin is tender.

After you scoop out the yummy stuff inside, don’t forget to scrape out the insides of the pumpkin! It tastes just like spaghetti squash!

Note: Check the size of your oven to make sure the pumpkin will fit.

White Chocolate Monster Munch

Serves: 12 | Prep time: 15 minutes | Cook time: 3 minutes | Total time: 18 minutes

INGREDIENTS

  • ½ (10-ounce) package mini pretzel twists
  • 2½ cups Honey Nut Cheerios
  • 2½ cups Corn Chex cereal
  • 1 cup peanuts (or mixed nuts)
  • 1 (12-ounce) package candy corn M&M’s
  • 2 cups candy corn
  • 1 (12-ounce) package white chocolate chips
  • 1½ tablespoons vegetable oil

INSTRUCTIONS

  1. In a very large bowl (or two medium bowls), combine the first 6 ingredients. Set aside.
  2. In a microwave-safe bowl, melt white chocolate chips and vegetable oil on high power in 30-second intervals, stirring between each interval, until chocolate is smooth and melted.
  3. Pour melted chocolate over cereal mixture and stir until all the cereal is evenly covered with white chocolate. Spread mixture on 2 large baking sheets lined with waxed paper. Let cool and then break apart into chunks.
  4. Store in an airtight container.

Spooky Smile Cookies

INGREDIENTS

  • 1 cup butter, at room temperature
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1½ cups peanut butter
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Additional sugar, for rolling cookie dough
  • 1 cup Nutella
  • 1 (10-ounce) bag mini marshmallows

INSTRUCTIONS

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, cream together butter, sugars, and peanut butter with an electric mixer. Add eggs, flour, baking soda, and vanilla extract and mix well.
  3. Roll dough into 1-inch balls, roll in sugar, place on an ungreased cookie sheet, and use a fork to make a crisscross design on top. Bake 10 to 12 minutes, or until golden brown.
  4. Let cookies cool completely. Spread Nutella on the smooth side of each cookie. Cut the cookies in half horizontally. Line the rounded edge of one cookie half with marshmallows and place another cookie half on top to make a smile!


Cheese Bread Doodles

INGREDIENTS

  • 4½ cups all-purpose flour
  • 1½ teaspoons instant yeast
  • ½ teaspoon salt
  • ¼ cup granulated sugar
  • 1½ nickel-sized drops liquid soy lecithin
  • 2 cups warm (100 degrees F.) water
  • 4 cups shredded mozzarella cheese

INSTRUCTIONS

1. In the bowl of a stand mixer fitted with a dough hook, mix flour, yeast, salt, and sugar to combine. Add soy lecithin and mix again.

2. With the mixer on low, slowly add warm water and mix 2 minutes, until dough is smooth and pulls entirely away from sides of mixing bowl. Cover bowl with a towel and let dough rest 30 minutes.

3. Line a baking sheet with parchment paper.

4. On a lightly floured work surface, roll dough into a large rectangle. Sprinkle heavily with mozzarella cheese and roll up like you would cinnamon rolls. Cut into 1½- to 2-inch slices with unflavored dental floss or a serrated bread knife and place on prepared baking sheet.

5. Bake until golden brown, about 10 minutes.

6. Remove from oven and, while hot, brush with Garlic Butter.

Garlic Butter

  • 4 tablespoons unsalted butter, melted
  • 1½ to 2 teaspoons garlic seasoning with parsley, such as Johnny’s Garlic Spread and Seasoning

1. Combine melted butter and garlic seasoning in small bowl and brush over tops of hot cheese doodles. Serve with pizza sauce for dipping.

Monster Cookie Energy Bites

INGREDIENTS

  • 1½ cups old-fashioned rolled oats
  • 2 tablespoons vanilla protein powder
  • 1 cup creamy peanut butter
  • ½ cup plus 1 tablespoon honey
  • ⅓ cup raisins
  • ⅓ cup mini chocolate chips
  • ½ cup mini M&M’s candies
  • ½ teaspoon vanilla extract

INSTRUCTIONS

1. Place all the ingredients in a large bowl and mix until everything is thoroughly combined.

2. Using a cookie scoop or clean hands, roll mixture into balls. Store in the refrigerator in an airtight container up to 2 weeks.



Caramel Apple Cookie Pizza

INGREDIENTS

Sugar Cookie Dough

  • ¾ cup unsalted butter, softened
  • ¾ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Cream Cheese Frosting

  • 4 ounces cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 2 cups powdered sugar
  • ½ teaspoon vanilla extract
  • 1 to 2 tablespoons milk or heavy cream

Toppings

  • 2 cups cubed Granny Smith apple
  • ½ cup chopped pecans
  • ½ cup caramel sauce

INSTRUCTIONS

1. Preheat oven to 350 degrees F. Line a 9x13-inch baking dish with parchment paper.

2. In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla. Mix until smooth.

3. In a small bowl, whisk together flour, baking powder, and salt. Slowly add flour mixture to wet mixture until combined.

4. Press into prepared baking dish. Bake for 12 to 14 minutes or until edges just start to brown. Let cool.

5. While dough cooks, prepare cream cheese frosting. In a large bowl, beat cream cheese and butter until fluffy. Add powdered sugar, vanilla, and milk or cream. Mix slowly at first, then increase speed until light and fluffy.

6. Spread frosting on cooled crust. Sprinkle with apples and pecans. Drizzle with caramel.
