Dole believes that morning routines do not have to be the same as a morning rut. With a bounty of bananas, berries, pineapples and various other fresh fruits, there is no excuse for not having tasty variety of the plate.

Dole Kids with Almond Toast

While parents might not always want kids to play with their food, this tasty breakfast recipe brings a little fun to the mix. Transforming toast into a fun image ensure that the kids will get some extra fruit on the plate.

Why not turn this breakfast into a table discussion. Have the kids explain their choices. Did they pick a fruit for the color or the flavor? What other ingredients would make this toast prettier, tastier or just more enjoyable. Why not make a toast bar and turn this idea into breakfast meal to remember.

Ingredients

  • 4 slices whole-grain bread
  • 6 tablespoons unsalted almond butter
  • 2 teaspoons honey, optional
  • 1 DOLE® Banana, peeled
  • 2 DOLE Strawberries, trimmed and halved
  • 4 chunks (1-1/2 inches) fresh DOLE Tropical Gold® Pineapple
  • 2 DOLE Blackberries
  • 2 teaspoons toasted flaxseed

Directions

  • Toast bread slices. Spread with almond butter and drizzle with honey if desired.
  • Make the Dole Kids: cut 8 slices and 32 matchsticks from banana. Arrange one strawberry half and a pineapple chunk on two slices of toast and arrange the remaining strawberry halves and blackberries on the remaining slices. Place a banana slice “head” at the top of each piece of fruit and arrange 4 banana matchsticks around each kid for arms and legs. Sprinkle flaxseed along the bottom edge of the toast, under the Dole kids’ feet.

Sweet Potato Banana Pancakes

Who doesn’t love a short snack drizzled with some maple syrup. Why not add a little extra to that pancake mix. With this Dole recipe, the traditional pancakes have both fruits and vegetables in a serving. Everyone will be asking for a second helping.

Ingredients:

  • 1 medium DOLE Sweet Potato, peeled and cut into ½-inch pieces (about 10 ounces)
  • 1 DOLE Banana, peeled and broken into 1-inch pieces
  • 1 cup oat milk
  • 1 large egg
  • 1 cup oat flour
  • 1 tablespoon baking powder
  • 1½ teaspoons ground cinnamon
  • Nonstick cooking spray
  • ¼ cup 100% pure maple syrup
  • ¼ cup coconut whipped topping
  • ¼ cup toasted chopped pecans

Directions

  • Add potato and 2 tablespoons water to a medium microwave-safe bowl; cover with plastic wrap, leaving an edge open to vent, and heat in microwave oven on high 8 minutes or until very tender. Purée banana, milk and potato mixture in a food processor on high until smooth; add egg and purée until combined. Transfer banana mixture to a large bowl. Makes about 3 cups.
  • Whisk flour, baking powder and cinnamon in a medium bowl; fold into banana mixture, stirring just until combined.
  • Heat a griddle or large nonstick skillet over medium heat; spray lightly with nonstick cooking spray. Pour ¼ cup batter per pancake onto heated griddle; cook 2 minutes or until air bubbles develop and underside is an even, golden color. Turn pancakes; cook 2 minutes or until bottoms are golden brown. Repeat with remaining batter, spraying griddle with nonstick cooking spray as necessary. Makes 12 pancakes.
  • Serve pancakes topped with syrup, whipped topping and pecans.
