There's no denying it - London going into Tier 2 lockdown measures is making us want to enjoy comfort food and treats.

We can't have our friends over and it is hardly a nice temperature to be sat outside a pub for a drink. So all we want to do is keep warm indoors.

Sadly, it looks like this is the way things are going to be for a while as we continue to live through the pandemic. And staying at home is not only saving our NHS, but saving lives.

So we are going to have to stay strong, stay home and make the most out of a bad situation.

And baking is a great way to do that.

While we may have a lot more time inside, we also realise this doesn't make our attention spans last any longer (quite the opposite in fact). This is certainly often the case with children.

We've therefore scouted out a recipe that will take just 20 minutes for you and your kids to make.

Baking is a productive and educational way to spend time with your little ones, and this cherry brownie recipe will leave them (and you) with a scumptious treat to say well done for staying indoors this weekend.

Jamie Oliver's cherry brownies

Ingredients

  • 130 g butter
  • 150 g dark chocolate (70% cocoa solids)
  • 55 g cherries
  • 55 g roasted pecans
  • 225 g caster sugar
  • 55 g cocoa powder
  • 75 g plain flour
  • ¾ teaspoon baking powder
  • 3 large free-range eggs
  • 50 g milk or dark chocolate , optional

Servings

Serves 16 (but we won't judge you if it only ends up serving one).

Method

1. Preheat the oven to 180ºC gas 4. Line a 20 cm square baking tin (or the equivalent) with grease-proof paper.

2. Melt the butter and dark chocolate in a bowl over a saucepan of simmering water (don’t let the bowl touch the water).

3. De-stone the cherries and roughly chop them along with the pecans. Stir into the melted chocolate, then take off the heat.

4. In another bowl, add the sugar, then sift in the cocoa powder, flour and baking powder. Add to the melted chocolate mixture and stir till well combined.

5. Beat the eggs and mix in. Roughly chop and stir through the milk or dark chocolate (if using).

6. Transfer the mixture to the tin, then bake in the oven for 15 to 20 minutes. You want them a little gooey in the middle.

7. Remove from the oven and cool in the tray, before cutting into squares.

And there you have it, delicious cherry brownies!
